“ Nous avons une superbe fête qui célèbre l’amour qui arrive à grands pas : la Saint Valentin ! Une fête que j’adore ! À « LOVE-the secret ingredient« , nous l’adorons ! Je ne sais pas si vous aurez le temps de faire cette recette le jour J, mais ça ne fait rien. Prolongez la Saint Valentin est faites-la pendant le weekend ! Je fais ce gâteau depuis près de 20 ans, et c’est une valeur sûre. Il est orgasmique – riche de beurre et de chocolat – vous pouvez vous perdre dans ce délice ! À chaque fois que je fais ce gâteau pour un dîner entre amis, les invités picorent toujours les miettes de l’assiette ou en redemandent ! Il est riche, riche, riche et complètement délicieux ! Et facile à faire. Fabriquez-le avec amour, et appréciez-le ! ”

Les ingrédients pour 8 personnes:

• 250 g de beurre doux, coupé en dés
• 200 g de sucre semoule
• 230 g de chocolat noir, grossièrement coupé
• 65 g de farine
• 3 gros oeufs
• Du sucre glace, pour la décoration

Réalisation :

Préchauffer le four à 180°C. Entourer l’extérieur d’un moule à charnière de papier d’aluminium, puis généreusement beurrer le moule. Placer le moule à charnière dans un plat allant au four aux bords hauts.

Dans une casserole, mélanger le beurre avec le sucre, et l’eau, et porter à ébullition tout en remuant. Retirer du feu. Ajouter le chocolat et mélanger jusqu’à obtenir une texture lisse; laisser refroidir.

Dans un bol, battre la farine avec les œufs. Ajouter la mixture de chocolat et mélanger jusqu’à obtenir une texture homogène. Verser la préparation dans le moule. Verser de l’eau frémissante dans le plat pour qu’elle atteigne 1/3 du moule. Cuire 1 heure et 10 minutes, ou jusqu’à ce que la croûte soit croustillante et un couteau plongé dans le gâteau ressorte presque propre.

Laisser refroidir le gâteau pendant 20 minutes. Le démouler puis le laisser refroidir complètement. Saupoudrer de sucre glace avant de servir. Vous pouvez également servir ce gâteau avec une crème fouettée légèrement sucrée à la vanille. Quelques framboises fraîches sont également une bonne variante !

“We have this wonderful big lovefest coming up – Valentine’s Day ! A terrific holiday in my book! We consider it our holiday, here at LOVE – the secret ingredient ! I’m not sure if you’ll have time to make this on the day, but no matter. Keep the holiday going and make it on the weekend. I have been making this cake for nearly 20 years now and it is a true winner. It is orgasmic – full of rich chocolate and butter – you can just sink into it and if you died, it wouldn’t be bad. Every time I make this cake for a dinner party, guests always either pick at the crumbs on the main plate or just want another piece. It is rich, rich, rich and totally yummy. And, it’s easy to make. Make it with LOVE and enjoy!”

Ingredients :

– 2 sticks plus 2 tablespoons (9 ounces) unsalted butter, cut into tablespoons
– 1 cup granulated sugar
– ½ pound high quality bittersweet chocolate, coarsely chopped
– ½ cup all-purpose flour
– 3 large eggs, beaten
– Confectioners’ sugar, for dusting

Directions :

Preheat the oven to 350°. Wrap the outside of an 8 or 9-by-3-inch round springform pan in heavy-duty foil, then generously butter the inside of the pan. Set the springform in a roasting pan.

In a saucepan, combine the butter with the granulated sugar and water and bring to a boil over moderate heat, stirring. Remove from the heat. Add the chocolate and stir until smooth and all the chocolate is melted; let cool.

In a medium bowl, whisk the flour with the eggs until blended. Add the chocolate mixture to the egg mixture and whisk until smooth. Pour the batter into the prepared springform pan. Pour enough hot (not boiling, but hot) water into the roasting pan to reach one-third of the way up the side of the springform. Bake the cake for about 1 hour and 10 minutes, or until the top is crusty and a cake tester inserted in the center comes out with a few moist crumbs attached. Let the cake cool in the springform on a rack for 20 minutes. Then remove the foil and the side of the pan and let the cake cool completely. Dust the cake with confectioners’ sugar just before serving.

Serve with lightly sweetened whipped cream with some vanilla. A few fresh raspberries are also a nice addition.

Mary Frances: Quand votre intention est l’amour, quand vous faites quelque chose pour les personnes que vous aimez, c’est forcément réussi. Quand vous cuisinez avec amour, même si vous faites des erreurs, les préparations ont toujours meilleur goût. C’est presque magique !

C’est un mot que votre fils a écrit dans l’un de vos livres de cuisine qui a été le point de départ du blog. Le partage d’un repas avec ses proches fait-il aussi partie de l’expérience en cuisine ? Pourquoi ?

MF : Définitivement – partager un repas avec ses proches complète la préparation culinaire. S’asseoir autour d’une table, converser, traîner, apprendre à se connaître, c’est ce qui est important : être en bonne compagnie et profiter des bons moments ensemble.

L’amour est l’un de vos ingrédients secrets. Quel autre ingrédient est obligatoire dans votre cuisine ?

MF : Honnêtement, c’est le gros sel français ! Je le mouds dans un pilon, et j’adore la saveur qu’il apporte ! Dès que mes amis voyagent en France, je les supplie de me ramener un sac de sel, car c’est si cher ici, et beaucoup moins là-bas !

Quel est votre dernier coup de foudre en cuisine?

MF : J’adore n’importe quel légume tout juste récolté, très frais. Une fois, j’ai vu des champignons shiitake dans un magasin. Ils étaient si blancs, si frais, si beaux, j’en ai presque pleuré ! J’adore également le cumin et mes pots Le Creuset. Et bien sûr, j’adore mon nouveau KitchenAid que mes fils m’ont offert pour mon anniversaire.

Pour vous, quels sont les ingrédients essentiels pour réussir son dîner de la Saint Valentin ?

MF : Ne pas faire un repas trop compliqué, car il faut du temps pour d’autres choses. J’aime par exemple cuisiner des côtelettes de veau, qui sont chères mais parfaites pour une occasion spéciale, sautées dans du beurre, de l’huile d’olive, avec des feuilles de sauge fraîches. Terminez le dîner avec une déclinaison au chocolat – un brownie bien riche ou un soufflé tout juste fait, c’est ravissant.

MF: Frais, Engageant, Délicieux (et je me dois ajouter…qui vient du cœur !)

Mary Frances: “When you cook with love, the food just tastes better !” (English version)

Mary Frances is a woman of heart. Her blog, « LOVE-the secret ingredient », is filled with recipes, tricks and all types of articles about her passion for cooking. With Valentine’s day coming up, we had a chat with this lover of great dishes and great moments !

In cooking, why is “Love the secret ingredient”?

Mary Frances : When your intention is love, when you’re doing something for people you love, it naturally turns out better. When you cook with LOVE, even if you make mistakes, the food just tastes better. It’s rather magical!

A note that your son wrote in a cookbook was the starting point of your blog. Is sharing a meal with loved ones part of the cooking process and experience? Why?

MF: Oh most definitely – sharing a meal with loved ones completes the process. Sitting around the table, conversing, lingering, learning more about each other, that’s what it’s all about – being together and enjoying each other’s company.

Love is one of your secret ingredients. What other ingredient is compulsory in your kitchen?

MF: Well honestly, it’s French grey salt. I grind it finer with a mortar and pestle and I just love the flavour it imparts! Whenever any of my friends travel to your country, I beg them to bring me home a bag of salt, as it’s so expensive here and so reasonably priced there.

What is your last case of “Love at first sight” in the kitchen?

MF: I love any just-picked, super fresh vegetables. I once saw shiitake mushrooms in a store that were so white underneath, so fresh, so beautiful, I almost cried. I love cumin and I love my Le Creuset pots. And of course, I LOVE my new blue KitchenAid my boys gave my recently for my birthday.

In your opinion, what are the main ingredients for a successful Valentine’s Day dinner?

MF: Don’t make anything too complicated, as you will want time for other things. I like to do a simple veal chop, which is expensive and special, sautéed in butter and olive oil with fresh sage leaves. Definitely end the dinner with some variety of chocolate – a good rich brownie or a soufflé you’ve made ahead of time is lovely.

Describe “Love-The Secret Ingredient” in three words?

MF: Fresh, Engaging, Deliciousness. (And I have to add… from the heart!)
